Kimchi Nabe

Last night Julie and I drove to a nearby town for dinner with some friends.  We feasted on kimchi nabe:  a traditional dish of kimchi broth boiled in a ceramic pot with fresh ingredients.

You can add anything you want to the pot.  Our gracious hosts selected two kinds of mushrooms, tofu, green onions, leeks, noodles, cabbage, and beef.  It was a fiery meal perfectly suited for these cold, snowy days in January.
