Most vegetables in Japan are either cooked or pickled — rarely are they eaten raw. In Oregon we would eat fresh fruit and vegetables all the time that were neither boiled nor fermented. We missed those wonderfully refreshing raw veggies so we took matters into our own hands.
The dish featured above is stir fry with salad. Ingredients in the stir fry include a packet of mabudofu sauce, a small amount of ground beef, carrots, broccoli, asparagus, yellow onion, and green pepper. The salad is just leafy greens and raw carrot with delicious Japanese style dressing. Since the veggies are stir fried they are only slightly cooked and retain much of their original nutritional value.
